So the monks started brewing, which first resulted in a dark table beer. We know from writings that a wheat beer also appeared some time later. At the beginning of the 20th century, there was again talk of a blond “Extra Gersten” (extra barley) beer: a predecessor of the Extra. In all that time, a lighter variant was invariably on the monks’ own table. They were happy to offer their Dubbel and Tripel to the outside world, but within the abbey walls, they opted for austere quality that better suited their lifestyle
